Fresh Southern Peach Cobbler
This is one of my all-time favorite foods, After doing some research I found this recipe and I have made it in the past and it is absolutely delicious!
What You'll Need
- Eight fresh peaches - peeled, pitted and sliced into thin wedges
- One quarter cup white sugar
- One quarter cup brown sugar
- One quarter teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- One teaspoon fresh lemon juice
- Two teaspoons cornstarch
- One cup all-purpose flour
- One quarter cup white sugar
- One quarter cup brown sugar
- One teaspoon baking powder
- One half teaspoon salt
- Six tablespoons unsalted butter, chilled and cut into small pieces
- One quarter cup boiling water
- MIX TOGETHER:
- Three tablespoons white sugar
- One teaspoon ground cinnamon
How to Make It
- Preheat oven to 425 degrees F (220 degrees C).
- In a large bowl, combine peaches, One quarter cup white sugar, One quarter cup brown sugar, One quarter teaspoon cinnamon, nutmeg, lemon juice, and cornstarch.
- Toss to coat evenly, and pour into a 2 quart baking dish.
- Bake in preheated oven for 10 minutes.
- Meanwhile, in a large bowl, combine flour, One quarter cup white sugar, One quarter cup brown sugar, baking powder, and salt.
- Blend in butter with your fingertips, or a pastry blender, until mixture resembles coarse meal.
- Stir in water until just combined.
- Remove peaches from oven, and drop spoonfuls of topping over them.
- Sprinkle entire cobbler with the sugar and cinnamon mixture.
- Bake until topping is golden, about 30 minutes.
