Lemon Meringue Pie recipe
What You'll Need
- one cup Water
- 7 tablespoon Cornstarch
- 2 cups Water
- one cups Sugar
- 3 Eggs, separated
- one medium Lemon
- one tablespoon Butter
- one baked pie shell
How to Make It
- filling Mix half cup water and cornstarch to thicken paste.
- Combine 1/2 cups water and sugar in top of double boiler and bring to a boil over direct heat.
- Add cornstarch paste and cook until mixture begins to thicken.
- Return to double boiler and continue cooking until thick and smooth (15 minutes).
- Pour over slightly beaten eggs, return to double boiler and cook 1 minute longer.
- Add lemon juice, rind and butter. Blend well.
- Cool and pour into pie shell.
- MERINGUE. Oven 325 Three egg whites 9 tablespoons sugar one teaspoon lemon juice Beat egg whites stiff, but not dry.
- Add sugar gradually and lemon juice. Bake in 330 oven in 15 minutes.
